accidentally delicious pumOn the fly pumpkin pie mixpkin pie-ettes

Newsletters still to come, but I needed to commit this to memory-

on the fly pumpkin pie
1 can pumpkin
1 can sweetened condensed milk
1/4 cup brown sugar
2 eggs
1/4- 1/2 t almond extract
1/2-1 t vanilla
1/4 tsp allspice
1/2 t cinnamon

Mix, pour into mini pie shells made in muffin tin. used puff pastry dough

Bake 350 30 minutes, cool to room temperature, eat.
baked extra in small stoneware casserole dish until set. Plan to eat with copious amounts of cool whip.
